Cotes du Jura Chardonnay/Savagnin "Les Belemnites", Domaine Buronfosse 2011

A wonderful white Cotes du Jura from a producer that's just beginning to be noticed. After a glass, the 70% Savagnin and 30% Chardonnay blend made perfect sense--the Chardonnay strong upfront and the Savagnin filled in. A startling harmony of flavors and freshness. This was aged three years ouille or non-oxidative. Hard to put down once you get started. Named after the 200 million year-old fossils found in Jurassic soils.

In 2000 Peggy Buronfosse, along with her husband, Jean-Pascal, took over a small parcel of old vines in La Combe Rotalier, where Ganevat works. They added a few more plots over the years, and today they farm about 5 hectares. They produce mostly white wines which excel in this part of the Jura south of Arbois. Even with Ganevat the reds are so-so but his whites stand out.

Buronfosse's vineyards are manually farmed organically by Peggy and Jean-Pascal. In the cellar Peggy vinifies as naturally as possible, with native yeasts, without sulphur, and without any additives, only adding a small dose of sulphites at bottling.
