From a one-hectare plot on the south bank of the Cher River in Touraine planted to 40 year-old vines of selection massale Sauvignon. Christophe Foucher ferments with indigenous yeasts and doesn't apply any additives. He doesn't sulphur during fermentation nor at bottling. The only sulphur he uses is a sulphur wick when he cleans out the barrels and the vats; he doesn't use any liquid sulphur. This Sauvignon saw at least two years elevage in barrel during which the wine was left alone to finish its slow fermentation. This has a wonderful oxidative feel, almost like a Jura Savagnin. Fresh and balanced, with a delicious richness and complexity you won't experience in another Sauvignon. Buy and discover.
