Sidra or cider from Asturias has been made since ancient times. Asturias in nothwestern Spain has over 30 local apple varieties from which their famous regional "wine" is made. Sidra de Asturias is a bone-dry natural cider without gas, It is traditionally poured with the bottle held above the head, allowing for a long vertical pour into a glass below, thus aerating the cider and causing it to fizz. It is a great aperitif and perfect with tapas and strong Asturian sheep cheeses, particularly Cabrales. The Acebal family in Asturias have been making cider since the 19th century. The current generation follows the cider production methods of their forebears. Their cider, called El Carrascu, is a specific blend of Asturian apple varieties, primarily Regona, Durona de Tresali, Carrio, and Limon Montes. 6% alcohol. Dry and refreshing. Serve this cool but not cold.
