Unique aged, dry sake made with premium yamadanishiki rice polished down to 60%. Its fragrant cedar scents combine brilliantly with the haunting aromas and rich umami flavors developed during three years of aging, including a year and a half in Yoshino cedar barrels or taru. Only a fraction of sakes produced today are koshu or aged sake, and even rarer are koshu aged the ancient way in Yoshino cedar wood from the forests of Nara Prefecture. This Sumiyoshi sake is an extraordinary sake experience. Its earthy, mushroomy, gamy, and Sherry-like flavors are perfectly paired with richer dishes like grilled meats, strong cheeses, and ham.
