From organically and biodynamically farmed vineyards in Cumieres in the Montagne de Reims. Current proprietor and winemaker Vincent Laval ferments in barrel and applies very little sulfites and does not cold stabilize, fine or filter. No dosage was added in this superb non-vintage (2010 base wine), allowing it to show its remarkable purity, as well as depth, complexity. Assemblage of 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier, with 90% from 2010 crop and 10% from 2009 reserve wine. It possesses the structure and aging potential that one finds in more expensive vintage Champagnes. Disgorged on 19th April 2013 L010. This extraordinary Champagne is a great buy and, because of the tiny production, a rare find.

"This is 50 percent chardonnay, 25 percent pinot noir and 25 percent meunier, and 10 percent of the blend is reserve wine from 2009. It's sleek and supple in texture, its ripe flavors of apple, cherry and citrus encased within a taut acidic structure. The fruit aromas persist with excellent length on the finish, anchored by chalky minerality, and the balance of components is impeccable, making this feel entirely harmonious and complete as a non-dose. "High-pitched, mineral-laced citrus fruit and honeysuckle aromas are complicated by notes of iodine, anise and ginger. Racy and precise on entry, then deeper in the mid-palate, offering intense orange pith and chamomile flavors and a touch of bitter quinine. Almost Chablis-like in its focus and mineral cut, finishing with excellent clarity and length.
