Vermut Priorat Natur, Buil & Gine NV

Priorat's greatest secret for the past century has been its excellent Vermouths, and this one from Xavier Buil of Buil & Gine is the most unique of all. Made from organically farmed white grapes (Macabeo, Pedro Ximenez, and white Garnacha) vinified with skin contact to extract aromas and flavors. To the wine is added an herbal/spice essence of rosemary, cumin, fennel, and vanilla, as well as sugar for the right sweetness. This Vermouth mixture is aged using the solera method of Jerez, where young wine is blended with older wine in barrel each year. Bottling is done in small quantities, with just 700 cases produced each year. The Vermouth has a minimum age of two years but mixed with Vermouth that is older. Intense, full of aromas, sweet and with a bitter finish that makes it fresh on the palate. An excellent drink to pair with salty or savory foods such as charcuterie, olives or nuts. It is also excellent with fish and shellfish. And works as accompaniment to desserts such as flan and light pastries. Finally, if you love cocktails, you'd find this the best with a Manhattan.
