The oldest vines in all of Saint-Julien are found in Domaine du Jaugaret. Cabernet Sauvignon is the principal crop and makes up about 80% of the blend, while the rest consists of Malbec and Petit Verdot. The average age of the vines is over 50 years-old, and some are well over 100 years-old! Consequently, the yields are incredibly low, less than 30 hectoliters per hectare.
In the old cellar with the barrel-aging room, an antique press is still used to crush the grapes into a large wood fermentation vat. The vinification is long, at least three weeks, and the wines are racked into small barrels and aged in a cool underground cellar for a minimum of eighteen months and up to three years in concentrated vintages! The wines are still bottled by hand and are always bottled unfiltered. Muscular and made almost entirely of Cabernet, they are built to last. Jean-Francois Fillastre simply describes his wines as: "good and made according to the oldest traditions."
