The most classic wine of COS, Cerasuolo di Vittoria is the only DOCG appellation in Sicily. This is a blend of 60% Nero d'Avola and 40% Frappato from estate vineyards in Bastonaca in Vittoria in southeastern Sicily. The complex soils are sandy, intermixed with clay, limestone, and tufa, and the vineyard is farmed biodynamically to maintain the balance. The grapes are harvested in two passings, not only for strict selection of ripe, healthy fruit but also to obtain the character of two types of maturity. The wine is vinified with natural yeasts in cement tanks and aged in oak botti for the Nero d'Avola and cement tanks for the Frappato. Deeply colored, with aromas of cherries, cocoa, herbs, and spices, gaining licorice notes as it opens up. Bright, fresh, and round on the palate, with a delicious, lingering finish. Nothing quite like this!
