As the name suggests, this is like going back to basics: the expression of pure Sauvignon Blanc fruit as grown in the minerally soils of Pouilly-Fume in the Loire. Barrel-fermented and aged half in stainless steel and half in neutral large barrels to give it more density. It's supposed to replace the discontinued En Chailloux bottling, but it's not the same wine. In 2007, it's low in alcohol (11.5%), mineral-packed with fruit that's vibrant and laser-focused, evincing pure Sauvignon Blanc flavors and aromas. Lush and round on the palate. What a stunning vintage!
